Shop-bought versions often go through pasteurisation or have preservatives added to keep them. Don't forget to drink the liquid you fermented in, too.

How do fermented products affect our health?

Fermented products are naturally soured products that hold within them a whole treasury of precious substances for our body and our health. They are full of nutrients and probiotics. Our ancestors already knew all of this; they heard it from their forebears. They may not have known the terminology, or exactly what happens and how, but they applied it, because they knew it worked. Science has now discovered that the best way to improve our gut bacteria (microflora) is to consume fermented products regularly. The key to our health lies in the gut, in a good balance of bacteria, because it also determines how well the body can make use of the nutrients, vitamins and minerals we take in with food or drink.

Our very favourite recipe of all is a drink made from dandelion flowers. Dandelion is an exceptionally healthy plant that works effectively on our liver, yet despite this it is little used, because people don't like its bitterness. That is how we saw it too, until we found a recipe in which we lose none of its nutrients and the result is a fine, healthy drink. Its bitterness can be tasted, but it no longer bothers you, because the citrus flavour and the sourness from fermentation give it a transformed, refreshing taste.

1 jar, 0,7 l

1 handful of dandelion flowers

1 slice of organic lemon

1 level tablespoon of honey

Clean water up to the lid (bottled, spring, well, or boiled and then cooled)

Mix everything together and close the jar. Keep it on a shelf in the kitchen. Open it once a day to release the gases that form. After 4-5 days, before the mixture would start to turn into alcohol, strain it and keep it in the fridge. Drink it every day; it's best diluted with water, half and half.

It's worth trying the same recipe, only instead of dandelion use lilac, rose, violet, lavender, or any fruit โ€“ raspberry, strawberry, sour cherry, whatever we have at home.

If your body struggles to absorb nutrients, it is certainly worth a try. With balanced gut flora, Spelta Vita products too can be put to far better use in the service of our health.
