Shop-bought versions often go through pasteurisation or have preservatives added to keep them. Don't forget to drink the liquid you fermented in, too.
The freeze-drying process for our cold-pressed grain juice products works as follows: the fresh cold-pressed juice is quickly frozen, its temperature is lowered to -50°C, it is dried in an absolute vacuum for at least 40 hours, and by the end of the process its form changes from frozen to powdered.
